In the heart of Burgos, where the echo of the pilgrims' steps resonates through the centuries, a restaurant has managed to capture the essence of the Camino de Santiago and elevate it to culinary excellence. The Ricardo Temiño restaurant, located on San Juan Street, has been awarded a prestigious Michelin Star, recognition for its innovative menu inspired by the flavors and traditions of walkers.
Under the direction of Burgos chef Ricardo Temiño, the restaurant offers a unique gastronomic experience that transports diners through a sensory journey that evokes the experiences of pilgrims. The menu, available in two versions, “Camino Largo” and “Camino”, is a tribute to local products and traditional cuisine with French influences.
The culinary journey begins in the winery, where a yakitori-style skewer of Burgos lamb is served, followed by a pâté en croûte inspired by Temiño's time in Lyon with Paul Bocuse. The experience continues in the kitchen, a space shared with the La Fábrica restaurant, where a team of 12 chefs work in perfect synchronization to create dishes that fuse tradition and avant-garde.
Back in the main room, diners enjoy appetizers that pay homage to Burgos tapas, such as fried bao stuffed with rotten pot and cojonudo, a fritter with Iberian bacon and bean cream. One of the most notable dishes is the Castilian soup, made with three spheres of different textures that represent the key ingredients of the traditional recipe.
Ricardo Temiño restaurant has not only elevated gastronomy inspired by the Camino de Santiago, but has also reinforced the connection between history, culture and culinary innovation. For modern pilgrims, this restaurant is an essential stop on their journey, a place where they can enjoy a feast worthy of a Michelin Star.
