At the height of the A Coruña municipality of Melide, he Camino de Santiago —specifically, the Frenchman— passes through the door of the workshop Borboriño. Over there, Sandra Alderey and his team do the magic of transforming the milk they themselves produce on their farm in artisanal ice cream. Sandra herself says it proudly: «It is the only ice cream that is made on the Camino de Santiago. It passes through our door and the pilgrims see us how we make it.
Sometimes, in the worst moments, the best ideas emerge and that's what happened to them. Almost a decade ago they saw the need to reinvent oneself in “one of those countless crises in the dairy sector”, to provide an outlet and “added value” to part of the milk they produced. Their farm is located in the Arzúa-Ulloa region, where cheese was already "very exploited", so, in 2016, they decided and launched themselves into the universe of ice cream.
Sandra herself supervises each phase of the production, from the moment the milk is extracted until the ice cream is distributed and reaches the hands of the final consumer, either in one of the large eateries they supply or in the windows of their own stores in Melide, Leftover, Bertamiráns y To Coruña.
For her, this means “unify” the process and it is the key so that "when the client receives it, it is of quality and differentiates itself from all the others." «Borboriño is everything: from the milk from the farm to the person who sells it in the display case, in addition to the Melide workshop and, of course, the customer. “Borboriño is what we are, it is a family,” Sandra alleges.
But where she spends most of her hours is in Melide's workshop. There lThey get the milk directly from the farm, they pasteurize it and make the base of the ice cream, to which, depending on the flavor, different ingredients are added before shaping it. The process is completed by "the hand that makes the ice cream, which has to treat that product with care, affection and professionalism" and, finally, "the hand that sells the ice cream in a showcase."
