The essence of Galician cuisine: If the walls of A'OLLO could talk, they would surely tell stories of eternal after-meals, spontaneous toasts and dishes that bring back childhood memories with every bite. The restaurant, with roots from A Coruña, occupies the seventh floor of the INNSiDE by Meliá hotel, becoming a gastronomic refuge where Galician tradition merges with modernity and privileged views of Gran Vía.

Its interior, of art deco inspiration, combines elegance and warmth in 500 square meters divided into different environments: open kitchen, two bars, large tables for groups and more intimate corners for those who prefer a quieter plan. In addition, it has two spectacular terraces. The essence of Galician cuisine

Your name, "by eye" in Galician, is a nod to traditional cuisine, the one in which scales or stopwatches were not needed because everything was measured with intuition, affection and the certainty that, if it is done with love, it always turns out well. That same philosophy is what permeates each dish on the menu, where tradition and modernity meet to create something unique.

The menu is a gastronomic journey that respects tradition, but without fear of innovating. Among its essentials are empanadas, croquettes of the day, rice dishes or Galician beef steak. And, of course, the king of the house: the grilled octopus, which never fails.

The essence of Galician cuisine

Although on its menu you will find a wide variety of dishes that pay tribute to the rich Galician gastronomy, There is a dessert that gets all the praise: the Santiago tart coulant, a sweet that reinvents the traditional recipe with a surprising texture and a melting interior, maintaining the unmistakable almond flavor and that touch of liquor that characterizes the original cake. With this creation, the restaurant manages to fuse the essence of a Galician pastry classic with a modern technique, becoming the perfect place for lovers of innovative desserts. Surely, this is the only coulant in Spain with the authentic flavor of the Tarta de Santiago, a detail that makes it an exclusive gastronomic proposal, capable of surprising the most demanding palates.

But if spooning is your thing, here you can find a version of Galician stew that will surprise you. In a tasting menu format, the gastronomic experience begins with a comforting noodle soup, followed by croquettes and cooked fritters with cabbage in its juice. Then, the main protagonists arrive: stuffed potatoes and pork shoulder with turnip tops. And to close with a sweet touch, some classic pancakes with cream and cheese with quince. A tribute to the Galician recipe book that transports you directly to a tavern in Santiago.
